Hot Mess Holiday Cupcakes with Buttercream Frosting

Damascus rose and green cardamom are a timeless combination. If you’ve ever heard of the Persian Love Cake, you’ll know that rose and cardamom have been used in Middle Eastern dessert recipes for ages.

Mama’s Hot Mess Holiday Cupcakes incorporate these two ageless flavors along with added spices like organic cloves, Ceylon Cinnamon, ginger, and Super Negin Saffron.

 INGREDIENTS

Cupcakes

  • 1-1/4 cup (295mL) of all-purpose flour or gluten-free flour
  • 1-1/4 tsp  (6mL) baking powder
  • 1 tsp (5mL) salt
  • 1/2 cup (120mL) of unsalted butter (softened)
  • 1 cup (240mL) of sugar
  • 2 eggs
  • 1 tsp (5mL) vanilla extract
  • 1/4 tsp (1.25mL) Mama's Masalas Hot Mess
  • 1/2 cup (120mL) of water

Frosting

Yield: app. 3-¾ cups

  • ½ cup (177.45mL) butter (unsalted)
  • 3 tbsp (45mL) of heavy cream
  • 2-1/2 cups (625mL) of powdered sugar
  • 1-½ tsp (5mL) of vanilla extract
  • 1/2 tsp (2.5mL) of Mama’s Masalas Hot Mess

Garnish  (optional)

  • 6 tsp (30mL) of all-natural pure cane sugar
  • 3 tsp (15mL) of whole ground cinnamon

 COOKING INSTRUCTIONS

Cupcakes

  1. Preheat oven to 350°F (177°C) and insert cupcake liners in a 12-count cupcake pan. 
  2. In a small bowl, add flour, baking powder, salt, sugar. Thoroughly mix dry mixture. 
  3. In a small pot, boil water. Add ¼ tsp (1.25mL) of Mama’s Masalas Hot Mess. Let the tea sit for 1 minute. 
  4. Slowly add tea to the dry mixture. Stir till smooth. 
  5. Next, add unsalted butter, eggs, and vanilla extract. Whisk until smooth. 
  6. Add ¾ of batter to each cupcake liner. Place on oven rack and bake. Frost when cooled.

Frosting

  1. In a medium-sized mixing bowl, add softened butter, heavy cream, vanilla extract, Mama’s Masalas Hot Mess. Mix with an electric blender on medium-high speed till smooth. 
  2. Slowly add in powdered sugar. Mix well. 
  3. Add about ¼ cup (62.5mL) of frosting to each cupcake.

Garnish

  1. In a small mixing bowl, add sugar and ground cinnamon. Mix well. 
  2. Sprinkle ½ tsp of garnish on each cupcake.
